Apricot Jam recipe

Ingredients:

3 lb of ripe apricots.
3 cups of sugar.
¼ cup of water.
Juice of one lemon.

Preparation Instructions:

Half, pit and coarsely chop the apricots.

Combine the apricots, sugar and water in a suitably sized saucepan and allow stand for at least 90 minutes.

Cook the apricots over medium heat until the mixture starts to boil, skimming away any foam from the surface.

Reduce heat to low and simmer for about 20 minutes or until thickened; then remove from heat.

Spoon into jars and seal; then refrigerate.
